The SENSORY & CONSUMER LABORATORY (Sensory&Consumer Lab) of University of Milan has been active in research and education since 1995 and was officially established in 1999 at the Department of Food, Environmental and Nutritional Sciences – DeFENS (formerly DiSTAM).


Our mission

Our mission is to study sensory and hedonic perception of food, and their implication on food choices. Research focuses on perception of appearance, taste, smell and texture in foods as well as applied research in sensory testing methods and psychological factors affecting sensory judgments.

Attention is also devoted to the investigation of learning and memory processes involved in food preference and choice.
